Ingredients

  • 1 lb of thick spaghetti pasta

  • 25-30 cloves of fresh garlic

  • 8 tbsp of unsalted butter

  • splash of olive oil

  • 1 tsp seasoning sauce (Maggi, Knorr, etc)+

  • 1/2 c grated parmesan cheese

  • 2 large eggs

  • green onions (garnish)

  • garlic salt (to taste)

  • black pepper (to taste)

Directions

  • Fill up a large pot with water and set on the stove to boil for the pasta.
  • While the water is boiling, prepare your ingredients.
    Mince half of the garlic cloves and slice the other half for textural differences and set aside.
    In a small bowl, whisk together the eggs, seasoning sauce, and cheese.
  • Boil the pasta until al dente.
  • While the pasta is boiling, place a large pan on medium heat, add in the butter and a splash of olive oil. Add in the garlic and gently fry for 3-5 minutes or until the garlic begins to turn golden. Turn off the heat.
  • Add in the pasta to the pan and mix well to incorporate the garlic and sauce throughout.
  • Slowly add in the egg, cheese, and seasoning sauce mixture to the pasta while mixing vigorously. Make sure to turn off the heat before to prevent the eggs from immediate cooking.
  • Add garlic salt and black pepper to taste. Add thinly sliced green onions for garnish.
  • Optional step: Add the garlic noodles to an oven safe pan or tray and place under the broiler for a minute or until crispy.

Notes

  • Fresh garlic is a MUST for this dish! It’s a lot of work to peel and cut, but it’ll be worth it in the end :).
  • If your noodles turn out too hard, add back in some boiling pasta water (a few tbsp at a time) and continue to cook the noodles in the pan on medium heat while occasionally mixing.
  • Placing the noodles under the broiler is optional, but I highly recommend it to create some textural differences!
  • For a completely vegetarian option without eggs, you can try substituting the eggs and mixing the cheese and seasoning sauce into some heavy cream.
