Salmon Crudo

1.5 lb farm-raised Atlantic salmon (skinless)
1/4 c iodized salt
1/4 c granulated sugar
- Marinade
1 lemon (juice)
1 orange (juice)
1 lime (juice)
1 tbsp soy sauce
1 tbsp olive oil
salt (to taste)
black pepper (to taste)
granulated sugar (to taste)
- Garnishes
1 red onion
1 green onion
1 jalapeno
1 cucumber
citrus zest
Directions
- Start by combining the sugar and iodized salt in a 1:1 ratio. Rub the mixture over the salmon and let cure in the fridge for ~30 minutes.
- While waiting for the salmon to cure, begin prepping the marinade and garnishes. Juice the lemon, lime, and orange and add olive oil and soy sauce to the marinade. Salt, pepper, sugar to taste.
- Thinly slice the garnishes and set aside.
- Once the salmon is cured, wash off the sugar and salt off under cold running water for 15 seconds. Pat dry with paper towels and into bite-sized sashimi slices.
- Plate the salmon and then pour over the marinade. Garnish as you desire. Enjoy.
Notes
- Use fish that you would feel comfortable with eating raw. An easier to find alternative would be frozen ahi tuna.
- Personally, I feel comfortable using Costco farm-raised Atlantic salmon which I will portion out and freeze for ~1 week for extra precautions.
